Summer Broccoli Salad + Passion Iced Tea!

Anyone who knows me well knows that I love iced tea. In fact, when I think of hot summer days I think of iced tea and twizzlers!! Come on, don't lie- you know you bite off both ends and use them like straws too.

I have been storing up this blog for a day like today! 80 degrees, sunny, and not a cloud in the whole sky! There's nothing like a cool salad to take you right back to a family picnic, patio party, or cook out. Thank goodness summer is coming. I come alive in the summer time.

Today I have two recipes to share with you: 1.) Broccoli Salad and 2.) Home brewed passion iced tea.

Let's begin!

Broccoli Salad

To begin I must tell you that I so graciously received this recipe from my friend Kim, and it is YUMMY. I wanted a good 'friend referral' for broccoli salad since I had never made it before and this little guy did not let me down! In fact, it's what I'll be downing tonight for dinner.

Lightly steamed. 

  1. Florets from 1-2 heads of broccoli 
  2. 1/2 cup red onion, finely chopped 
  3. 1/2 cup raisins 
  4. 1/2 cup chopped cashews or walnuts 
  1. 1/2 cup mayo - I use the mayo w/olive oil. YUM 
  2. 1/2 cup plain yogurt 
  3. 1 teaspoon white vinegar 
  4. 2 tablespoons sugar 
I 'ever-so-slightly' steamed my broccoli before adding it to the salad since I prefer it that way, however it is still delicious w/out steaming. Simply add everything to a bowl and stir it up! You may find that it's easier to stir together the dressing ingredients first but I didn't. Is your mouth watering yet? Enjoy! 

Passion Iced Tea 

Ok, so you're at Starbucks placing your order for an iced tea and your bill ends up at a minimal of $2.00 right? That's a huge at home savings if you ask me. 

They offer the delicious teas in the same varieties you would find at Starbucks- Black, Green, and Passion teas. I am pretty much a humongous fan of the passion so naturally that's what I grabbed for. Here's how it works:
Let the tea bag steep in 1 quart of boiling water for 5 minutes. At this point you could add some sweetener to the tea if you prefer it sweetened. Next you will add one quart of cold water, stir well- and you're done! You will be ready to serve the yummy tea over ice to your guests.
