Creamy Broccoli Soup

Broccoli Soup
You guys...
I made this soup up all on my own! As in- no recipe, no Rachael Ray, nada. It was more of a 'whatever's in our cupboards is going to be made into soup' kind of thing. And so, with my ten pounds of broccoli (I exaggerate) and other odds and ends, I made this up.

The older I get, the more I realize that just about anything can be made into soup. Just throw stuff in a pot, add some broth or water or whatever, add spices, and bam--> soup happens. Kind of magical, really. And so was the case with this broccoli soup. Born out of sheer scarcity and culinary genius (maybe more the former than the latter).

Begin by adding the chopped broccoli, onion, water, and chicken broth to a large pot. Bring to a boil, then simmer for about 45 minutes or until the broccoli is pretty darn soft.

Using an immersion blender, puree about half or more of the soup. It really depends on your taste, if you like it more chunky then don't puree so much.

Once soup is pureed, add in 2 tablespoons of butter and stir until dissolved and mixed well. Then add the cream, salt, bacon pieces, and lastly- shredded cheddar cheese. Bring to a simmer for a few minutes, then serve! It's that simple. Mmmm...

Serve soup with artisan bread or rolls and enjoy!

Ingredients:
-2 'large' bunches of broccoli, chopped (mostly florets, but some stems are good too!)
-1 yellow onion 
-32 oz. chicken broth
-4 cups water
-1 cup shredded sharp cheddar cheese (say that five times fast, ha)
-2 pieces of cooked bacon, chopped into small bits
-1 tsp. salt
-2 Tbs. butter
-1 cup of cream 
(pepper to taste? optional) 

Method:
-Bring the broccoli, onion, water, and broth to a boil then simmer for about 45 minutes or until the broccoli is quite soft. 
-Using an immersion blender, puree about half of the soup (depending on how chunky you like it).
-Stir in 2 tablespoons of butter until dissolved and well blended.
-Add the cream, salt, bacon, and (lastly) shredded cheddar to the pot and bring to a simmer for a few minutes. 
-Serve hot and enjoy!

Well, Michigan is pretty much a frozen tundra these days. I mean it. Recently, every morning has been BELOW freezing when I head out to work to start my car. What the what?? Can I get some relief here? Anyway, I hang on to the hope that Spring is fifty-some days away and I'm a survivor. You have to be hardcore to live here, you just have to.

With that being said, I am SO not motivated these days to expose my little self to polar temperatures in order to snap outfit pictures. Just, no. I can't. Everyone has their limits. When it warms up again (I'm talking- 30's, 40's, ANYTHING above 10!), you can count on me once more. For now- I'll be chillin' by our little electric fireplace and dreaming of the bahamas.
