Homemade Pancakes

A few days ago I made homemade pancakes... for the first time 'ever'.
It seems strange to me that I had never tried making them from scratch before as that's what I do with most everything else, but- nope. Never made a homemade pancake, until now.

You know those moments when you get to craving something and you just can't shake it? Maybe for you it's fried chicken or fresh baked bread or ice cream. For me, on this day, it was pancakes (for dinner I might add)! I was absolutely positive that we had pancake mix at home so I didn't bother picking up any while Ben and I were out at the store that night. I returned home to discover that we had NONE and I was beyond frustrated. SO- I made my own. Hey, you gotta do what you gotta do. And wowee-- these babies turned out delicious! I will probably never buy pancake mix ever again. I found THIS original recipe online and modified it slightly to fit my taste.

1.) First you begin by mixing together the flour, baking powder, salt, and sugar. **For a fluffier pancake, sift the flour twice before mixing.

2.) Next, add the milk, vanilla, egg, and melted butter and mix until smooth.

3.) Start spooning your mixture onto the griddle. I like to add mini chocolate chips right after I pour the batter (because if you're going to eat pancakes, you might as well go all out, right?). I have my grandma to thank- she taught her entire family (all 50+ of us) to have an affinity for chocolate chip pancakes.

And that's it! So simple, and SO stinking delicious. Are you craving pancakes now?

The sun is shining through my library window as I type this and it's managing to put me in a 'rather jolly' mood. ;) Gotta soak up all the vitamin d I can get in these winter months. Have an amazing day friends!

Ingredients:

1 1/2 cups flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups of milk
1 egg
3 tablespoons butter (unsalted)
1/2 teaspoon vanilla

Method:

Spoon mixture onto griddle and cook until lightly brown on both sides.
