Pulled Beef & Banana Pepper Sammies

The Meat 4
Hey guys! Crazy week here. Ben and I had to leave a day early for a business trip (due to snow-mageddon that descended on us) and I was just not prepared to release the kitchen makeover post before we left. So hang with me, it's coming. In the meantime, here's a 2 INGREDIENT recipe that you will love! Yes, just two ingredients go into the crock-pot to create this magical little meal. I can deal with that. This recipe came from my friend Diane years ago and we've used it over and over. It's tried and true, and it's delicious!

Just find yourself a 3-4 pound roast (doesn't really matter what kind of roast) and large jar of banana peppers. That's it!

Put your roast in the bottom of the crock-pot and top with the jar of banana peppers ALONG with the juice. Cook for 8 hours on low or on high heat for about 6 hours. The meat will literally fall apart which is good because you'll want to shred it entirely. Mix the shredded beef with the strained banana peppers and assemble your sammies! Place the meat/banana pepper mixture on the bottom bun and top with a slice of provolone cheese! That's it! Ben also likes horseradish sauce on his sammies, so that's an option too.

You wont' believe how good these babies are. There's just something about the vinegary-ness of the peppers that makes the meat 'sooo' good and tender after 8 hours of slow-cooking. I hope you'll give it a try at home! I'm not even a huge fan of banana peppers but man, I love this meal.
